In 1284, during the battle of Meloria between Genova and Pisa, there was a storm and seawater was mixed with oil and chickpeas flour contained in sacks in the hold of ships. The mush backed by the sun became a tasti flat fritter quite good. This food was cooked by the crew even on the mainland. So chickpeas pie was a discovery of the Genoese, but Livorno inhabitants have served it as a sandwich in white bread. I read that the name "5 e 5" derives from the fact that in the past were asked the sellers of chickpeas pie 5 cents of pie and 5 cents of bread, so the name "5 e 5". My family and I, often eat chickpeas pie. My mother in able to cook it and we like it very much. We are satisfied, even if cooked on a wood oven is better. My mother's recipe is: mixed 250 gr of flour in 750 ml of water and a pinch of salt, about 3-4 hours before cooking it. When above is golden, you switch off and leave it in the oven about half an hour before eating. Try it yourself!
